1 (18 ounce) package maraschino cherries, sliced
1 (10 ounce) package instant lemon pudding mix
10 (3 ounce) packages instant chocolate pudding mix
1 1/4 cups milk
4 eggs
1 tablespoon lemon zest
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 cup chopped walnuts
1 cup frozen whipped topping, thawed
1 (8 ounce) package frozen whipped topping, thawed
Place cherries and pudding mix in a medium saucepan and bring to a boil over medium heat. Boil 10 minutes, stirring constantly, or until tender. Remove from heat and remove from pan. Stir in the milk and eggs.
In a large bowl, cream together the butter, cream cheese, brown sugar, lemon zest, oil, lemon extract and 1 cup whipped topping. Beat until light and fluffy. Fold in the whipped topping. Sprinkle mixture over cherries and pudding. Chill at least 2 hours before serving.
