2 tablespoons vegetable oil
1 small onion, sliced
1 large carrot, peeled and cubed
3 cloves garlic, crushed
1 bay leaf
1 tablespoon Italian seasoning
1 (14.5 ounce) can black lentil beans
Bring oil, onions, carrot and garlic to a boil in a large pot over medium heat. Gradually saute until tender; continue to saute for about 5 minutes.
Stir in bay leaf and Italian seasoning; simmer for another 1 minute (or to desired consistency). Stir in lentil beans, cover and cook, stirring occasionally, for 20 minutes. Note: You may not need all of the beans, as long as you add enough to cover your whole pot of beans.
