4 cups chopped almonds
1 cup boiling water
3 cups cold coffee, room temperature
2 teaspoons lemon juice
1/3 cup plain yogurt
3 cups hot brewed coffee
Place almonds in a large bowl. Cover pan with foil and let stand overnight, covered, at room temperature. Fill pan with boiling water. Boil over medium heat until steaming, about 25 minutes. Stir in coffee and lemon juice. Remove foil from pan. Bring to a boil. Reduce heat to medium, cover and simmer for 10 minutes, stirring occasionally.
To serve, stir together coffee blend with chopped almonds, lemon juice, yogurt and hot coffee. Add in eggs and stir just until combined. Serve immediately, and chill in refrigerator for 24 hours.
