1 (18.75 ounce) package strawberry cake mix
1 (3 ounce) package instant vanilla pudding mix
1 cup boiling milk
2 cups water
1 egg
3 1/2 cups margarine, softened
1 cup golden raisins
1 teaspoon sugar
3 tablespoons rum
1 pint strawberries
3 1/2 cups flaked coconut
1 teaspoon rum flavoring
1 (2 pound) loaf Italian bread, cut into 1 inch cubes
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9x5 inch) loaf pans.
In a large bowl, Beat cake mix, pudding mix, boiling milk, egg, margarine, golden raisins, sugar and rum until well blended. Beat in strawberries and coconut. Mix in rum flavoring.
Dab a small amount of rum into each loaf of bread cubes. Place banana slices on bread cubes. Place 1 banana on each bread cube. Place a cherry on top and sprinkle with 3 tablespoons rum.
Bake in preheated oven until a toothpick inserted in center of each loaf comes out clean, about 50 minutes. Cool the loaf in the pan for 10 minutes before cutting into squares. Cool loaf completely before cutting into squares.
