1 (10 ounce) can evaporated milk
1 tablespoon unsalted butter
1 tablespoon hot water
2 tablespoons brown sugar
1 egg
1 teaspoon vanilla extract
4 ounces shredded mozzarella cheese
In a medium saucepan bring water to a boil. Add milk and butter and stir until butter melts. Stir in hot water, brown sugar, eggs and vanilla. Reduce heat to medium and cook over low heat for 8 minutes, stirring gently until thickened.
Spoon 1/4 cup of butter into one bagel. Top and side with mozzarella cheese. Roll up closed and seal edges with butterfinger or toothpicks. Cut into 1/2 inch squares.
