1 (16 ounce) can diced tomatoes with green chile peppers
1 cup water
1/2 cup uncooked instant rice
1 onion, diced
1 1/2 cups cooked chicken meat
In a small saucepan, combine tomato and water. Bring to a boil, reduce heat, and simmer 15 minutes.
Place rice in a large bowl, cover, and add chicken. Stir, cover, and return to a boil. Reduce heat, cover, and simmer 5 minutes. Remove from heat and stir in chicken meat. Cover, reduce heat to medium, and simmer 45 minutes. Pour the rice mixture into the celery and chile peppers and chicken mixture. Mix thoroughly, and serve.
