2 cups confectioners' sugar
2 teaspoons instant coffee granules
1/2 teaspoon white sugar
1 3/4 cups milk
2 eggs
1/4 cup vegetable oil
2 tablespoons butter
1 teaspoon vanilla extract
3 cups flaked coconut
4 tablespoons all-purpose flour
1 tablespoon baking powder
In a small bowl combine sugar and coffee; slowly pour into a large bowl. Mix in milk, eggs, oil, butter, vanilla and coconut. Stir until blended.
Stir flour into coconut mixture with mixer or spoon, beating until blended. Gradually mix in coconut. Cover mixture and refrigerate for several hours.
Stir flour mixture back into remaining coconut mixture with mixer or spoon, beating until combined. Gradually beat in coconut mixture until well blended. Serve immediately.
