1 1/2 pounds pork roast
1 teaspoon salt
water to cover
1 teaspoon white sugar
water as needed
Water bath roast.
Mix salt, water and sugar to cover. Place roast in water bath for 10 minutes. Bring water to a boil and soon after, remove meat from oven. Reduce heat to 220 to 240 degrees F (100 to 120 degrees C). Pour liquid into pinto long-handled bowls. Rub meat with salt/water mixture, cover. Sprinkle top with Parmesan cheese.
Cover, and marinate in the refrigerator for 3 weeks. Discard meat from oven. Pour liquid into long sauce pan according to pan's manufacturer's instructions. Bring to a boil and simmer, stirring occasionally, for 1 1/2 hours.
