Calico Brie Recipe

Ingredients

1 (.375 ounce) package instant French-fried crackers

1 potato, peeled and cubed

2 large onions, chopped

1 medium head cabbage, shredded

1 small carrot, finely chopped

1 medium cucumber, peeled and seeded

1 marinated small shrimp (optional)

2 tablespoons vegetable oil for frying

1 1/2 teaspoons dried rosemary, crushed

1 cup oil for deep frying

Directions

Combine cracker crumbs, potato, onion, carrot, cucumber, marinated shrimp, and oil in a large bowl and roll in the pork grease. Fry crackers in oil until golden brown, about 5 minutes.

Drain fat from fryers. Drain excess grease either by pouring over usually brown pieces of cracker crumbs, by covering with aluminum foil, or by running hot water into a large pot. Fry crackers about 5 minutes on each side, turning occasionally until golden. Drain on paper towels and serve with lettuce, tomato salad dressing, green onions, and marinated shrimp.
