1/2 teaspoon vanilla extract
1/4 cup butter, melted
1 (4 ounce) can crushed pineapple with juice
1 1/2 cups finely chopped almonds
1/2 cup finely chopped pecans
1/2 cup chopped walnuts
Cut the cream cheese into tiny chunks. Pour cream cheese mixture into a medium bowl. Mix in eggs, vanilla, butter, pineapple, almonds, pecans and walnuts. Stir until well blended.
Arrange spoonfuls of cream cheese mixture over the graham crackers, placing a few spoonfuls behind the cracker to avoid smearing. Serve with whipped cream or whipped cream cheese frosting.
