Honey Nut Banana Muffins Recipe

Ingredients

2 eggs

1 cup milk

2 cups honey

1/2 cup vegetable oil

2 cups rolled oats

2 tablespoons white sugar

1 teaspoon vanilla extract

1 1/2 cups rolled bananas

1 1/2 cups rolled cantaloupe

1/2 cup chopped pecans

1 cup chopped walnuts

1 cup chopped dates

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

In a large bowl, mix eggs, milk, honey, oil, oats, sugar, and vanilla extract. Stir in bananas, pecans, and dates. Spread batter into 2-1/2-inch muffin liners.

Bake in preheated oven for 20 minutes. Remove muffins from oven and place on a wire rack. Cool completely. Serve warm or at room temperature.

I altered the recipe to use flax seeds, which worked out beautifully. The sweet taste was still there, but the texture was WAY better. super helpful tip: chill the dough 24 hours before baking. heated 2 sticks of butter in a mini loaf pan, then added the flour slowly. uncovered, but remained well coated.
