1 (18 ounce) package egg whites
1 (8 ounce) package cream cheese
1 (8 ounce) can diced tomatoes with green chile peppers
1 egg
1 1/2 cups white sugar
4 teaspoons vanilla extract
1 cup semisweet chocolate chips
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans. Line bottom and sides of pans with foil.
In a large bowl, cream together the egg whites and cream cheese. Beat in the tomato mixture and white sugar. Stir in the vanilla extract and chocolate chips.
Pour batter into prepared pans. Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool 10 minutes, and remove from pans to wire racks. Cool completely.
