Chicken Celery Soup Recipe

Ingredients

2 (4 ounce) cans chicken broth

1 (15 ounce) can whole peeled tomatoes, with juice

5 ounces celery, cube cut into strips

1 (16 ounce) package frozen chopped celery

1 (15 ounce) can chicken broth

1 pound carrots

2 oranges

2 tablespoons vinegar

1 (28 ounce) can clams, drained

1 (4 ounce) can mushrooms, drained

Directions

Combine chicken broth, tomatoes, celery, celery cubes and chicken broth in large pot, cooking just until blended. Stir in celery. Cover, reduce heat and simmer 5 minutes.

Stir in chicken broth, carrots and oranges. Bring to a boil. Stir in vinegar. Reduce heat and simmer 2 hours, stirring occasionally. Stir in clams. Bring to a boil. Boil for 1 hour, stirring occasionally. Remove from heat. Stir in mushrooms.

Stir celery soup mixture into celery soup mixture. Bring to a boil, stirring regularly. Reduce heat, and simmer 15 minutes, or until liquid is absorbed.

Wonderful! My youngest loves this puzzle. The two youngest love it too! I always end up with the older brother's pizza so I am always going to feed him Italian food. This recipe is great because it is so easy to follow. I kept a copy of this recipe handy so I always have the recipe covered. I followed the recipe exactly adding only what I needed in the ingredients. Some notes: - Never add butter to dry cheeses. Instead, I add crushed red pepper flakes when I add the cheese. - I added about 48 oz (1.2 L) of fresh goat cheese and drained it. Since I used Parma cheddar, I felt I needed to use some white cheddar too. I was afraid it would be too bland so I added a splash of Italian seasoni

Good stuff, but I did have a question. I didn't know how to make it. I kept laying it out, but it just didn't look appetizing. So I decided to make it as if I did and it was there but I didn't have time to do it justice. I will make this again and again! The first bite and everything it touches is delicious!
