Hoosier Roll Soaking Soaker Recipe

Ingredients

2 cups warm milk

2 cups warm water

2 teaspoons kosher salt

2 tablespoons white sugar

5 cups dried yellow corn flake cereal

1/2 cup fine sugar

1 cup golden raisins

2 cups rolled oats

Directions

Mix milk, water, salt, sugar, corn flake cereal, raisins and rolled oats to form a soft dough. Shape into rounds, place into 8-inch (3-centimeter) pans.

Beat egg whites until foamy. Add cereal if desired; refrigerate and shape overnight.

Generously grease biscuits. Roll out biscuit-shaped dough and roll log same shape and size into 1-inch balls.

Pour filling from loaf pan onto each biscuit. Brush tops of biscuit balls with cooking spray. Roll small meatballs into rings. Place on sticky side of mixing bowl. Using stiff brush, combine filling with a 1 teaspoon of marshmallow flavoring and marshmallow sugar. Brush tops and sides to slightly spread marshmallow mixture. Remove biscuit-shaped scraps of marshmallow mixture and add to warm filling.

Bake at 375 degrees F (~190 degrees C) for 45 minutes in the preheated oven, or until biscuits are barely moist.

After I sauted the peanuts in the olive oil, I added the onion, carrot and celery and sauted them in the remaining egg, along with the rest of the vegetables (more or less) in a skillet with the olive oil. I didn't have any beer, so just used a little extra milk. Once the potatoes were tender, I added the beer, leaving the egg and vegetable mix alone. I added the corn and stirred it into the potatoes, scraping up the sides and bottom as necessary. I added the fresh rolls and baked for about 20 minutes at the end. The rolls were delicious and slightly sweet. I did this recipe as a part of the Western Region's Faceless Frenzy July 2012.

Loved this one! Not too sweet, but sweet enough. Used a strawberry muffin cup as the base, made no changes and it came out great. Healthy, too. Just a hint of almond extract might be a good addition...yours really depends on what you want.
