1 (1 ounce) package dry corn muffin mix
2 tablespoons mayonnaise
2 tablespoons prepared horseradish
1 cup finely chopped celery
1 (15 ounce) can crushed cornflake croutons
1 (3 ounce) package cream cheese, softened
1/2 pound hot dog meat
1 quart pimento cheese, diced
1/4 cup shredded mozzarella cheese
1 large onion, sliced into 1/2 inch slices
1 (5 ounce) can tomato puree
1 teaspoon chopped fresh parsley
Place dry muffin mix in microwave oven, stirring. Cover, and microwave to 1 minute, stirring constantly. Stir in mayonnaise, horseradish, celery, and crushed cornflake croutons. Microwave 5 minutes, or until mixture is smooth and coats the back of a metal spoon. Spoon over muffins or to grease containers.
Slice bread into 1/2 inch slices. Bring a large pot of lightly salted water to a boil. Add muffins and cook for 9 to 11 minutes. Remove muffins from oven; spoon mixture over breads. Mix Mayo & Cream Cheese, hot dog meat, pimento cheese, mozzarella cheese, onion slices, tomato puree, parsley. Serve warm.
