Peach Chiffon Pie Recipe


1 recipe pastry for a 9 inch double crust pie

1 package cream cheese, softened

1 tablespoon white sugar

1 egg

1/2 cup peach preserves

1 teaspoon vanilla extract

1 cup chopped peaches


Preheat oven to 375 degrees F (190 degrees C). Line a 9 inch square baking pan with foil. Spread citrus filling on foil seam-side down, on both sides. Spray tablespoon of sugar on bottom.

Stuff pastry with cream cheese. Cut out 4 slits in top. Place inside crust.

Roll out peach preserves and sprinkle over filling. Spread about 1/2 cup peach filling over peach crust.

Bake in preheated oven for 25 minutes.

Turn from side to side. Bake for 15 minutes. Bake an additional 30 minutes. Cool completely before cutting into bars.
