4 ounces spinach, cut into small wedges
1/2 pound mild cream cheese, softened
2 slices onion, coarsely chopped
3 1/2 ounces chopped cooked chicken meat
4 bunches red potatoes, peeled and sliced into 1/2 inch thick wedges
1 tablespoon distilled white vinegar
1/2 cup chopped cooked chicken
2 teaspoons butter
1/4 teaspoon salt
1 tablespoon ketchup
Preheat oven to 375 degrees F (190 degrees C).
Place the spinach, cream cheese, onion and chicken in a large mixing bowl. Pour the vinegar over all. Mix together pepper mustard, caraway seeds, salt and ketchup. Pour mixture all over processed cheese while mixing. Spread out evenly on large lasagna dish. Sprinkle 1/3 cup chicken over spinach mixture. Top each piece of Parmesan cheese with a potato wedge. Sprinkle with tomato sauce. Place top piece of cheese over potatoes. Top with remaining cheese. Place lasagna in a 9 inch baking dish. Place skillet over medium-high heat and top with foil. Bake 30 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C) and continue oven unroasting 10 minutes.
