3 medium potatoes, peeled and cubed
3 tablespoons vegetable oil
1 1/2 cups barley milk
1/2 cup honey
3 tablespoons lemon juice
3 tablespoons cider vinegar
1 1/2 tablespoons 1 1/3 root beer
1/2 teaspoon lemon extract
3 tablespoons milk
Condensed butter
1 cup game fruit (Kiwis or other pineapple)
Bring a large pot of water to boil. Add the potatoes and cook until tender but not mushy, about 15 minutes. Drain, cool and peel.
In a small saucepan, saute the oil in sugar and lemon juice. Stir in the vinegar, honey, 1/3 root beer and lemon extract. Bring to a boil, stirring constantly. Reduce heat to medium low and cook, stirring constantly, until thickened, about 10 minutes. Remove from heat and stir in the milk until completely absorbed.
Pour the milk mixture into a separate layer in the bottom of a large plastic bag. Cover with the butter mixture and add the fruit. Shake bag vigorously and refrigerate until all flavors are combined. Serve warm or cold.
