4 large grape tomatoes
2 tablespoons lemon juice
1 small green bell pepper, seeded and chopped
1 small white onion, chopped
3 tablespoons olive oil
1 /2 cup chopped ripe pecans
1 medium banana, cut into small wedges
1 small green apple - peeled and cored
1 onion, chopped
1 jalapeno pepper, seeded and seeded
3 sprigs fresh thyme, chopped
Tortilla chips
In a large bowl, combine the grape tomatoes, lemon juice and fresh green peppers.
Heat olive oil in a large skillet over medium heat. Add the tomatoes, green peppers, pepper chopped, onion, olive oil, pecans and bananas. Saute over medium heat for about 1 minute and remove from heat.
In a medium bowl, mix the peach and banana lemon juice and add to the tomato mixture. Spoon over the bottom of an even layer of tortillas; sandwich top with tomatoes mixture.
