1 (18 ounce) can frozen lemonade concentrate
1 (8 ounce) container frozen whipped topping, thawed
2 (8 ounce) packages skim milk chocolate syrup
1 (3 ounce) package instant vanilla pudding mix
1/2 cup white sugar for decoration
1 egg
1 teaspoon vanilla extract
1 (20 ounce) can sliced fresh strawberries
1 (16 ounce) can crushed pineapple with juice
In a small saucepan, combine lemonade concentrate, whipped topping, chocolate syrup and pudding mix. Bring to a boil, stirring constantly. Reduce heat to medium-low. Cook, stirring constantly, for 1 minute. Remove from heat; stir in sugar and egg. Gradually stir in vanilla and strawberry juice. Pour mixture into 9-inch-square baking dish.
Bake in preheated oven for 1 hour, or until toothpick inserted in center comes out clean. Cool slightly before cutting into squares.
Lemon pie is my favorite pie to begin with. I made this pie recipe into a cake for a birthday... NOT our favorite... But it was a very good pie... I've made smaller portions for casserole and freezer fried chicken and even baked smaller portions for a turkey until it thawed. I had never used whipped cream before in a recipe, so I used my salt and pepper shaker to do this, then my finger cakes to do the reverse. It got me thinking what other ingredient is not used but deserves this special praise?
