Coconut Sticks
1 (14 ounce) can hominy
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup maple syrup
1 cup peanut butter
4 pinches butter flavored elderflower cream
In a large bowl, mix the coconut sticks, hominy, cinnamon, nutmeg, salt and maple syrup. Mix loosely until the coconut isn't sticky. Gently fold in the peanut butter. Fold up dollops of the mixture onto the fried tofu pieces. Serve immediately.
