Date Cookies Recipe

Ingredients

1 tablespoon vegetable oil

6 cups all-purpose flour

1/2 cup white sugar

1 1/3 cups quick cooking oats

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

1 tablespoon dried lemon zest

Directions

Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets. Mix together the flour, sugar, oats, baking powder, baking soda, and salt; set aside.

Using the 1 1/2 cup of flour for the top, place the dough on the prepared cookie sheet to about 1/4 inch thick. Drop 2 tablespoons of lemon zest into each blob of dough. Roll into 1 inch balls. Roll the balls in the lemon zest. Place 1 cookie at a time on the cookie sheet using the one that came with it.

Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

I ended up making this instead of using Lactation Lozenges because I couldn't find any at the store. I was still determined to try the product though, so I decided to give it a try. It comes out great. I used Stevia, but you can also use regular milk. I did use vanilla almond milk, but it didn't seem to be working. That's because I didn't heat the milk enough. I did use 2 tsp. of cinnamon and 1/2 tsp. of nutmeg. It was still pretty thin, so maybe next time I'll add another tsp. of baking powder. Wish I wouldn't have shot for so low on recoil.
