1 cup butter
1 cup white sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1 tablespoon cocoa powder
1 teaspoon cream of tartar
1 teaspoon salt
5 1/2 cups whole grain flour
1 teaspoon baking soda
1 (5 ounce) can Irish cream, or as needed
In a large bowl, cream together the butter, sugar and egg. Beat in the milk and milk thoroughly, then stir in the vanilla and cocoa. Combine the flour, baking soda and salt; stir into the creamed mixture until just blended. Fold in the whole grains. Drop by rounded spoonfuls onto ungreased cookie sheets.
Bake for 15 to 20 minutes in the preheated oven, or until a toothpick inserted into the center of the cookie comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
