8 ounces pizza crusts
1 (16 ounce) package pizza sauce
4 ounces pepperoni sausage
4 ounces mozzarella cheese
8 ounces shredded mozzarella cheese
16 ounces shredded mozzarella cheese
Lightly grease and flour an 8 inch square pan.
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan bring 1 1/2 of pizza sauce to a boil. Stir in pepperoni sausage. Reduce heat, cover and simmer for 2 to 3 minutes.
Drizzle remaining 25 ounces pizza sauce over pizza crusts, ensuring solid crust; you'll have deep craters.
Pour pepperoni mixture over mozzarella cheese, then 1 1/2 of cheese over the second pizza layer, and sauce over mozzarella cheese layer. Tie with kitchen twine. Sprinkle remaining pizza sauce over pizza. Place edge of pie over cheese, sealing edges. Place trays on dish.
Bake in preheated oven for 35 minutes. Unwrap the topping, remove with a slotted spoon. Cool before cutting.
