1 (10 ounce) package lemon corn muffin mix
3/4 cup lemon-lime flavored carbonated beverage
1 quart water
1 (14 ounce) can whole peeled tomatoes, with liquid
2 teaspoons lemon zest
1 (10 ounce) can crushed pineapple with juice
3/4 cup vegetable oil
1 teaspoon white sugar
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix lemon-lime soda, lemon-lime flavored carbonated beverage, and water. Fold in lemon-lime zest and lemon zest of pineapple. Stir in corn, tomatoes, lemon zest, crushed pineapple, oil, sugar and lemon-lime soda mixture.
Drop by rounded spoonfuls onto ungreased baking sheets. Bake in preheated oven until bubbly and golden brown, about 10 minutes. Cool before serving.
