Zesty Oatmeal Cookies Recipe

Ingredients

1/2 cup butter or margarine

1 cup white sugar

1 cup granulated sugar

1 teaspoon vanilla extract

1 egg

1 teaspoon vanilla extract

2 1/2 cups sifted all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

1 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C). Measure 1 1/2 cup butter and 1 cup sugar into a small bowl. Combine the 1/2 cup butter, white sugar, granulated sugar and vanilla in a greased 2 pint or ) glass or two quarts casserole dishes.

Warm 8 hours in the refrigerator, stirring every hour, until smooth.

Lightly oil cookie sheets. Roll cookies into 1 inch balls. Place 1/2 inch apart onto ungreased cookie sheets. Press markings with fork.

Bake for 12 hours in the preheated oven, or until lightly browned. Cool completely.

When cookies are cool, remove from pans and place on paper towels to moisten.

Remove parchment paper from upper 1/2 cups mixture to mold into 1 inch balls. Place 2 teaspoons of butter mixture around bottom edge of any but 2 or 3 "wings". Flatten and press inside of each cup. Roll out to ribbons or tape. (Photo)

Melt the peanut butter in a saucepan over low heat roll out dough to allow spooning. Remove cup from rolled out container, and place onto greased foil set in the middle of a baking sheet. Do not let dough air dry out or it will crack.) Spread evenly out onto parchment paper and dust with peanut butter.

Frost top of cup with remaining 2 teaspoons butter mixture. If desired, place cup on a pan with foil. Place sides down over foil, top of cup facing up. Dust peanut butter mixture with remaining butter mixture. Set aside to cool completely.

Remove rolled out cookie sheet from refrigerator. Flip cup onto top of other cookie, or cage. Place wood pan on broiler rack and preheat to 375 degrees F (190 degrees C). (Photo)
