2 potatoes, peeled and cut into 1 inch pieces
1 small onion, diced and quartered
1 (1.25 ounce) package dry Italian-style salad dressing
1 cup tomato paste
1/2 cup milk
1 teaspoon salt
1/2 cup chicken broth
1/2 cup dry white wine (optional)
Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of water to a boil and add potatoes. Boil potatoes 5 minutes, boiling. Drain and cool.
Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl, mix potatoes, onion, Italian-style salad dressing, tomato paste, milk and salt. Pour into medium, deep bowl. Place potatoes in oven and add simmering broth or wine. Cover potatoes until potatoes begin to simmer, then cover and eliminate oven.
