1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
1 tablespoon butter
1 cup white sugar
1 egg
5 tablespoons milk
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
2 teaspoons peanut butter
2 1/2 teaspoons vanilla extract
1/2 teaspoon lemon zest
1 scotch bonnet (or ice)
1 cup pitted dates, divided
Preheat oven to 350 degrees F (175 degrees C).
Combine 3/4 cup flour with baking powder and butter in large bowl. Beat at medium speed, scraping bowl every 5 minutes. Add sugar, egg, milk, and salt. Mix at low speed, scraping bowl every 5 minutes. Stir in vanilla, peanut butter, lemon zest, and 1/2 teaspoon lemon zest. Mix well.
Pour batter into 9-inch pie pan. Bake in preheated oven for 35 minutes.
Remove freezer bag from oven. Spread filling into pastry shell. Bake for an additional 30 minutes. Remove and serve hot or warm.
