1/2 cup butter, melted
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
2 tablespoons chopped fresh parsley
1 (12 ounce) package frozen mixed vegetables, thawed
1 egg, lightly beaten
1 (5 ounce) can diced tomato
1 teaspoon butter flavored extract
2 teaspoons canned lemon juice
1 (2 pound) whole chicken
salt and pepper to taste
In a large bowl, blend melted butter, lemon juice, and vanilla extract.
In a small bowl, mix mixed vegetables, egg, tomato, butter flavored extract, lemon juice, chicken mixture, salt and pepper.
Place chicken in the blender, and process for 1 minute. Salt and pepper to taste. Chill mixture in refrigerator to serve.
