1 tablespoon lemon juice
1 cup water
4 teaspoons ginger root extract
1 (36 fluid ounce) can lemon-lime soda
2 cups gin
In a medium saucepan, combine lemon juice, water, and ginger mint extract. Bring to a complete boil. Cover, reduce heat, and simmer for about 2 minutes. Remove from heat, and pour in lemon-lime soda and gin. Continue simmering over medium heat 5 minutes, stirring constantly until mixture is thickened and almost reaches a glaze stage (liquid recedes from edges of glass).
In a large mixing bowl, beat rum against ice cubes. Cool, and share.
