Chicken Bacon Creole Recipe

Ingredients

1 (4 pound) whole onion, finely diced

1 tablespoon chopped green bell pepper

1 tablespoon chopped celery

1 tablespoon diced shallots

2 tablespoons allspice

1/2 (22 ounce) can Bacon, diced

1 1/2 cups all-purpose flour

1/4 cup vegetable oil

1/4 cup Irish cooking wine for wine touch

1 1/2 teaspoons paprika

Directions

Place onion, green bell pepper, celery and shallots in a large pot over medium-high heat.

When onions are fully tender, add diced Bacon and cook 1 1 minute, stirring constantly.

Pour flour into pot. Pat dried out grease over pan, keeping bottom of pot shallow. Add oil and butter and continue to stir until partially heated.

Add wine and paprika to pot and stir together using hands until thickened and covered, about 5 minutes. Pour batter into pan while stirring to form sauce.

Brown on all sides, about 5 minutes. Baste with olive oil sauce while cooking. Serve warm or cold.
