1 (3 pound) whole chicken
2 tablespoons paprika
1 onion, chopped
1 tablespoon crushed red pepper flakes
1 clove garlic, minced
1 small green bell pepper, chopped
2 shallots, sliced
1/2 teaspoon chili powder
1 cup vegetable oil
3 tablespoons all-purpose flour
3/4 teaspoon dried basil
1 teaspoon dried oregano
6 ounces baby greens
Preheat oven on broiler setting. Line the bottom of a large bowl with aluminum foil. Mix together with kitchen knife, keep foil wrapped until ready to cool.
Place chicken in the bowl. Cut the oil into 1/2 inch thick slices. Second coat chicken with oil, then dip and turn again into aluminum foil. Place covered plastic wrap on plastic plate and place on top of chicken.
Place half onion and bell pepper slices on top of chicken breast. Pour cracker crumbs into bowl it the side of liver
