6 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons chopped fresh parsley
2 teaspoons dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 cup chopped fresh basil
2 teaspoons dried basil leaves
1 1/2 teaspoons dried rosemary
6 ounces cucumber
1 1/2 cups red or green bell pepper
1 medium pineapple
1 (6 ounce) can chopped spinach, drained
3 tablespoons sunflower seeds
2 tablespoons brown sugar
2 tablespoons salt
In a large bowl, mix olive oil, garlic, parsley, basil, oregano, salt, basil, rosemary, cucumber, red pepper, pineapple and spinach. Transfer mixture to a large bowl and toss in brown sugar, salt and brown sugar. Stir in remaining ingredients. Cover and refrigerate for 4 hours.
