1 1/2 cups rolled oats
1 cup all-purpose flour
2/3 cup butter, softened
1 teaspoon baking soda
1/3 cup shortening
1 teaspoon salt
3/4 cup white sugar
3 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 cup butter, melted
1 teaspoon vanilla extract
Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets, line them with parchment paper or cardboard , and set aside.
In a medium bowl, combine oats, flour, and butter, beating well after each addition. In a large bowl, cream together the shortening, margarine, and baking powder. Beat until smooth, then stir in the sugar, one cup at a time, until all sugar is dissolved. Stir in the egg mixture alternately with the vanilla. Drop cookies by rounded teaspoonfuls onto the prepared cookie sheets. They should be about 2 inches apart.
Bake for 8 to 10 minutes in the preheated oven. Cool 10 minutes on cookie sheets. Meanwhile, preheat oven to 375 degrees F (190 degrees C). While cookies are still warm, carefully remove from baking sheet. Cool completely on wire racks.
