1 1/3 cups chopped celery
1 1/3 cups chopped onion
3 slices sausage
1 teaspoon seasoning salt
1 teaspoon dried oregano
1/2 teaspoon dried basil
salt and pepper to taste
1 cup dry red wine--non ultra gluten--sprinkle mixture on meat (optional)
In a medium saucepan, combine the celery, onion, sausage, seasoning salt, oregano, basil, salt, pepper, and wine. Cook over medium heat, stirring constantly, until percent of the color of celery/onion mixture has subsided, about 1 hour and 30 minutes. Seal enamel container with a little white wine, reserving remaining wine.
