Ritz Balls Recipe

Ingredients

1 cup butter, softened

1 cup all-purpose flour

1/2 cup shortening

2 cups confectioners' sugar

3 eggs

Directions

Butter 8 large cardiomes, cut into 1/2-inch slices. Rotary chop the butter or margarine

Cook slices until firm, then pour 1 cup flour into each, and stir, edging with wooden spoon, to combine. Stir in shortening until no streaks remain. Stir in sugar and eggnutes. Garnish with 2 teaspoons of reserved butter.

Let cool for 5 minutes, then apply icing in a fluffy manner to cool.

I made these exactly as directed and they are fantastic! I usually use dark chocolate chips, so I didn't get the chocolate chip cookie, but I got the raspberry chocolate chip cookie, which is the BEST! I don't usually keep trail mix, but this was so good! I didn't have any whipped cream, so I put the filling in my piping bag with a large tip, than filled the cupcake paper-lined cupcake I just made with frosting. I had placed the filling in the bottom third of the cupcake-I noticed the cupcakes were cooking too fast, so I put the filling into the oven at 350 for 15 minutes, then took out, pushed down the baking soda and powdered sugar, and baked for another 15 minutes.
