4 cups diced potato
1 cup sweet pickle relish
3 cups diced celery
3 cups diced onion
2 large (10 ounce) cans diced green chile peppers, drained
3 medium tomatoes, diced
1 lemon, juiced
1 cup pineapple juice
1/2 cup chopped celery
In a mixing bowl, combine potato, relish, celery, onion, green peppers, tomatoes, lemon juice and pineapple. Mix until well-packed.
Heat a wok or skillet over medium heat. Add potatoes, and toss to coat. Remove from heat, and set aside.
In a mixing bowl, combine potatoes, relish, celery, onion and chile peppers. Mix until well-packed. Drizzle over salad, and toss gently to coat.
