Chewy Corn Muffins Recipe


1 tablespoon butter, softened

1/4 cup brown sugar

1 teaspoon vanilla extract

2 eggs

3 cups white sugar

1 teaspoon ground cinnamon

1 teaspoon salt

1 teaspoon ground nutmeg

1 1/2 cups milk

1 (8 ounce) package cream cheese, softened

2 eggs

1 teaspoon vanilla extract

2 cups corn muffin mix


Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

In a large bowl, butter and brown sugar recipe drop by tablespoons over the top of muffin liners.

Beat eggs. Stir in sugar, cinnamon, salt, nutmeg, milk, and cream cheese. Stir in eggs and vanilla extract; beat well. Spoon muffins onto prepared muffin cups.

Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until toothpick inserted in center comes out clean.

I followed the recipe exactly, all is well. No soup, nothing fancy. Just used liquid arrow and threw together with vegetables. I did make sure to sprinkle the carrots and celery with the sea salt.
