4 beef tenderloins, diced
1 egg
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1/2 teaspoon ground nutmeg
1 cup fresh Italian-style red potatoes
1 cup olive oil
1 recipe Italian recipe saltine cracker crumbs
3/4 cup fast-cooking water
2/3 cup dry white wine
salt and pepper to taste
3/4 cup vinegar
1/2 cup Worcestershire sauce
Preheat oven to 350 F (175 C).
Preheat oven to 400 degrees (200 degrees C) and lightly grease 2 RAME broiler pan cups.
In a large bowl, combine pork, egg, salt, pepper, nutmeg and pepper. Mix well, place in prepared pan. Cook until tender, about 20 minutes.
Heat oil in a large saucepan over medium-heat. Add onions and green bell peppers and saute 5 to 10 minutes or until rumbled.
Stir potato mixture and wine and cook until tender, about 7 minutes or until liquid is absorbed and potatoes are tender. Season with salt and pepper. Reduce heat and add vinegar; simmer for 1 minute.
Add crumbled potatoes to saucepan and cook 5 minutes. Sprinkle with Worcestershire sauce.
