2 skinless, boneless chicken breast halves - cut into bite size strips
1 1/4 cups butter
2 bananas, sliced and sliced cubes
Place chicken in a shallow casserole dish or skillet. Heat butter over medium-high heat, stir in flour and set aside.
Mix together banana slices and fruit cubes in a large bowl. Salt chicken with 1 tablespoon flour, then cut into 1 by a third measure, keeping tucked inside.
Place chicken breasts in pans or casserole dishes, pressing meat together to keep from getting water through.
Broil until crispy; remove and reserve. Serve warm.
