1 cup butter, melted
8 slices bacon
1 medium onion, sliced
3 stalks celery, sliced
1 cup chicken broth
1/2 quart oil for frying
4 skinless, boneless chicken breast halves
1 pound sauerkraut, diced
1 (10 ounce) package frozen mixed vegetables
1 tablespoon mayonnaise
1/4 teaspoon salt
Heat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
Slice bacon into 1/4 inch slices.
Place an onion slice in center of the bottom half of each chicken breast. Spoon bacon grease over chicken.
Fry five slices of bacon on each side of chicken. Repeat with remaining chicken and bacon. Place coated chicken in pan. Pour 1 teaspoon bacon grease over vegetables.
Heat 2 tablespoons oil in a large skillet over medium-high heat. Fry sauerkraut in oil about 3 minutes on each side or until golden brown. Drain on paper towels. Mix in mixed vegetables, mayonnaise and salt and serve.
