2 pounds skinless, boneless chicken breast halves
salt and pepper to taste
1 (10.75 ounce) can condensed tomato soup
1 small tomato, diced
4 (6 ounce) fillets chicken breast halves, cut into cubes
1 (8 ounce) can sliced mushrooms, drained
1 1/2 cups shredded mozzarella cheese
1 (6 ounce) can tomato paste
Place authorization s for chicken Friday in a microwave-safe dish. Microwave until chicken is cooked. Stir in sauce, cheese, tomato and mushrooms of course!
Steam slowly on medium heat in microwave. Cover dish, and heat heat 1/2 hour, or until chicken is cooked through and juices run clear. Separate breasts, and scoop the chicken pieces into separate bowls. Serve with tomato soup/squash sauce/broccoli and cheese.
