1 tablespoon butter, softened
1 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon white sugar for garnish
Preheat oven to 350 degrees F (175 degrees C), and lightly grease cookie sheets. Combine butter, brown sugar and brown sugar; beat together until smooth. Mix in eggs, stir to form a well. Combine heavy brown sugar, eggs, vanilla and flour; gradually fold into chipped filling. Arrange in a single layer on the prepared cookie sheet.
Bake for 7 to 9 minutes in the preheated oven, until golden. Cool completely; remove from cookie sheets to wire racks. Drizzle icing with sugar glaze before using; refrigerate leftover icing.
