1 1/2 tablespoons rice vinegar
2 tablespoons white sugar
2 tablespoons light brown sugar
Preheat oven to 450 degrees F (230 degrees C).
Season eggplant with seasoning packets, then place in coconut milk mixture. In a blender, puree cauliflower into milk mixture. Add vinegar, water, rice and sugar. Pour into baking dish.
Bake in preheated oven 30 minutes, or until firm.
