6 large carrots
1 pint lemon-lime flavored liqueur
1 pint lemon-lime flavored liqueur
1 pint honey
1 (1 ounce) package lemon-lime flavored flavor-enhanced scotch-flavored liqueur
6 cups water, divided
Place carrots in cooler, non-stick pot with 1 cup water. Bring to a boil over medium heat. Cook, stirring occasionally, for 2 to 3 minutes or until tender. Stir in lemon-lime liqueur, honey and lemon-lime liqueur. Boil gently for 2 to 3 minutes. Remove carrots from heat, and let cool slightly.
Place carrots in pot over high heat. Cook for 10 minutes, stirring occasionally. Pour in lemon-lime liqueur, water and lemon-lime liqueur. Cook, stirring occasionally, for 3 minutes or until heated through. Serve in bowls.
