Ingredients

1/3 cup vegetable oil

1 can mushroom red pepper flakes

1 (1 ounce) can small mushrooms, all kinds

1 medium onion, quartered

1 large carrot, quartered

1 medium green bell pepper, quartered

2 medium onions, quartered

1 medium potato, quartered

3 sprigs fresh parsley, crushed

1 dash added salt

Directions

In a large pot combine the oil, mushrooms, onion, carrot and bell pepper. Bring to a boil and continue stirring until carrots are tender.

Mix mushrooms, onion and carrots with several tablespoons chopped onion and parsley. Cover, reduce heat and simmer 5 to 10 minutes. Add mushrooms and parsley and salt, and simmer for 5 minutes. Stir with a spoon to boil slightly longer.
