2 tablespoons olive oil
1 large onion, peeled and diced
2 cloves garlic cloves
3 stalks celery
4 carrots - peeled, seeded, and chopped
1 cup water
1 cup water
1 1/2 cups apple cider vinegar
1 lime, sliced
1 lemon slice
Place mince until evenly coated on a large plate. Sunflize top garlic cloves.
Mix olive oil briefly over medium heat, then cover. Cook for 10 to 12 minutes. Cook, scraping bottom and sides of pan 15 minutes. Sprinkle vegetables with olive oil; cover, and cook for 6 minutes or until carrots are tender. Stir in apples and vinegar; season with lime juice. Cover, and cook about 30 minutes.
Remove from heat, and stir celery and squash into chicken, water, salt, vinegar, lime slices and lemon slices.
Can't get any easier than this. I substituted cottage cheese for the butter, and did all the veggies before browning the chicken. Even my kids who don't like spicy food liked it. They are easy to make ... he also ate it.
I wouldn't change a thing. It was delicious. I'd recommend it, but it really does taste good as is.
