Peach Caramel Cheesecake Recipe

Ingredients

6 ounces peaches

2 (18.25 ounce) packages lemon flavored Jell-O

1 (3 ounce) package lemon flavored Jell-O mix

1 cup vegetable oil

2 cups lemon-lime flavored carbonated beverage

1 (6 ounce) can frozen peach slices, thawed

1 (8 ounce) package frozen sliced strawberries

1 (8 ounce) package peaches, sliced

1 (10 ounce) can lemon-lime flavored carbonated beverage

Directions

Prepare the peaches according to package directions. Reserve 1/3 cup reserved peaches for another use.

Layer peaches in a 9 inch springform pan, filling 1/2 to 2 inches above the frosting. Arrange peach slices atop peaches, leaving cut side up, and frost the top with lemon-lime jell-O. Place sliced peaches on top of peach slices. Cover with a large decorative cloth and refrigerate for 1 hour, or until set. Cover and refrigerate peach slices for another hour.

Prepare the lemon-lime flavor of lemonade according to package directions. Using a small glass, pour 1 cup lemon soda into a blender, bringing the full volume to shake. Blend until smooth, about 15 seconds. Pour into large resealable plastic bag. Cover and refrigerate 1 hour, or until set. Refrigerate lemon-lime flavor of lemonade for at least 2 hours before serving. Remove peach slice garnish with remaining peaches and lemon-lime flavor of lemonade. Refrigerate peach slices for at least 2 hours before slicing. Cool completely or store in refrigerator. Refrigerate remaining peach slice garnish with peach slices. Prick peach slices with toothpicks before serving. Cut into 1 inch squares. Serve chilled.
