1/4 cup olive oil
1/3 cup chopped onion
2 tablespoons freshly ground black pepper
3 cloves garlic, crushed
1 tablespoon grated fresh ginger root
2 teaspoons white sugar
1/2 teaspoon chili powder
4 curry leaves
1 slice English muffin bread, cracked
Heat olive oil in a large saucepan over medium heat to make sherry. Cook onion until fragrance is gone and onion will be coarse; remove from pan. Stir in pepper, garlic, ginger and sugar. Lower heat to low. Cook until gelatin is dissolved; whisk in chili powder. Stir in curry leaves. Cook for 2 minutes. Remove from heat; stir in bread and sauce. Cover, lid on pan slightly rolled. Let cool for at least 10 minutes; remove meat.
While steak is cooking, pour 1/2 of the sherry over the bones and vegetables, stirring thoroughly. When the meat is cooked, bring a large pot of lightly salted water to a boil. Add tamales and cook for 2 minutes. Remove from heat.
When the sherry has risen again, add oil to pan. Stir vigorously until thickened. Saute onion in pan for maybe 2 minutes. Stir in meat and cook until well browned. Cut into 1/4 inch slices.
I added butter, garlic and onion powder. Literally just sat around feeling uncomfortably full. But this is so good and so simple. Thanks for sharing.
