2 eggs
1/2 cup white sugar
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 1/2 cups blanched slivered almonds
1 teaspoon lemon zest
2 teaspoons lemon juice
1/2 cup butter or margarine
1 cup milk
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9-inch pie pan.
Beat eggs in large bowl; stir in sugar, vanilla, flour, baking soda and almonds. Beat egg mixture into flour mixture, mixing just until incorporated. Stir in lemon zest and lemon juice. Strain into pie pan.
Bake in preheated oven for 60 minutes or until serving.
Grease pie crust.
To Make Meringue: Salsa:
1/2 cup salsa
2 tablespoons soy sauce
1/2 cup pineapple juice
1/2 cup sugar
In a blender or food processor, combine salsa, soy sauce, pineapple juice, sugar, pineapple chunks and sugar. Blend on medium speed until smooth. Pour mixture into pie crust. Chill crust overnight or chill overnight.
